Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente, about 8-10 minutes.
  3. Reserve 1/4 cup pasta water before draining the pasta.
Making the Sauce
  1. While the pasta cooks, heat olive oil in a skillet over medium heat.
  2. Sauté minced garlic in the skillet until fragrant, about 1 minute.
  3. Add ricotta cheese to the skillet and mix until well combined.
  4. Gradually mix in grated Parmesan until smooth.
  5. Add lemon zest and juice to the ricotta mixture and stir until combined.
  6. Season with salt and black pepper.
Combining Ingredients
  1. Add the drained pasta to the skillet, mixing to coat with the sauce.
  2. Gradually add reserved pasta water until desired sauce consistency is reached.
  3. Stir in chopped basil and serve immediately, garnished with extra basil if desired.

Notes

Use freshly grated Parmesan for the best flavor, don’t skimp on the lemon; it brightens everything up. Always reserve pasta water; it’s liquid gold for your sauce!
