  • 3 tablespoons olive oil Using room temperature olive oil helps the asparagus cook evenly.

  • 1 Juice of 1 lemon
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons grated Parmesan cheese For topping after baking.

Preparation
  1. Preheat your oven to 425°F (220°C) and prepare a baking pan by lining it with parchment paper or lightly coating with non-stick spray.
  2. Spread the trimmed asparagus across the baking pan. Drizzle with 3 tablespoons of olive oil and season generously with salt and pepper. Toss to coat and arrange in an even layer.
  3. Squeeze the juice of one lemon over the asparagus. Top with ¼ cup of grated Parmesan cheese.
Cooking
  1. Bake in the preheated oven for 8-10 minutes, until the asparagus is crisp on the outside and tender inside.
  2. Remove from the oven and sprinkle with the remaining 2 tablespoons of Parmesan cheese while hot.

Notes

This dish pairs nicely with grilled chicken, fish, or hearty pasta. For a delicious presentation, garnish with lemon zest or freshly chopped parsley.
