  • 1 pound ground meat (beef, turkey, or chicken) Choose your favorite lean meat.
  • 1 large onion, diced Brings warmth to the dish.
  • 2 cloves garlic, minced Adds fragrant flavor.
  • 6 cups chicken or vegetable broth Homemade or quality store-bought is preferred.
  • 1 large lemon, juiced and zested Adds brightness to the soup.
  • to taste salt and pepper Simple seasonings.
  • 1/4 cup fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté for about 3-5 minutes until softened.
Cooking
  1. Add your choice of ground meat and cook, breaking it apart with a wooden spoon, until browned, about 5-7 minutes.
  2. Pour in the broth and bring to a gentle simmer.
  3. Stir in the orzo pasta and cook until al dente, about 8-10 minutes, stirring occasionally.
  4. Stir in the zest and juice of the lemon, and season with salt and pepper to taste.
Serving
  1. Ladle warm soup into bowls and garnish with freshly chopped parsley.

Notes

For extra flavor, sauté some carrots and celery with the onion and garlic. Use homemade broth for a richer taste. Fresh herbs can be added at the end for extra freshness.
