  • 1/4 cup crumb topping Store-bought or homemade.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan to prevent sticking.
  2. In a bowl, combine 1 cup of flour, softened butter, and powdered sugar, mixing until crumbly—this should take about 2-3 minutes.
  3. Press this mixture firmly into the bottom of the prepared pan to form the crust layer.
  4. Bake the crust for 15 minutes until it turns lightly golden brown and smells irresistible.
Making the filling
  1. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, 1/4 cup flour, baking powder, and salt until smooth—this should take about 2 minutes.
  2. Pour this luscious lemon filling over the baked crust, ensuring it spreads evenly.
  3. Bake for an additional 20-25 minutes until the filling is set and the edges are golden brown.
  4. Allow the dish to cool completely. Once cooled, sprinkle the crumb topping over the top.
