Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened Make sure your butter is at room temperature for easier mixing.
  • 1/4 teaspoon salt
Filling
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup freshly squeezed lemon juice For best results, use fresh lemons.
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the flour, powdered sugar, softened butter, and salt. Mix until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
Filling Preparation
  1. In another bowl, whisk together the granulated sugar, eggs, freshly squeezed lemon juice, lemon zest, and baking powder until smooth.
  2. Pour the lemon mixture over the crust in the baking dish, spreading evenly.
  3. Sprinkle the remaining crumb mixture over the lemon filling.
Baking
  1. Bake for 25-30 minutes until the top is golden brown and the filling is set with a slight jiggle.
  2. Allow the bars to cool completely in the dish before slicing.

Notes

These bars can be enjoyed warm, at room temperature, or chilled. Dust with powdered sugar before serving if desired. Store in an airtight container in the fridge for up to five days or freeze for up to three months.
