Preparation
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Potato Preparation
- Wash, peel (if you prefer), and cut the potatoes into small cubes. Toss them with olive oil, salt, black pepper, and paprika.
Roasting Potatoes
- Spread the seasoned potatoes on one side of the baking sheet and bake for 25 minutes, stirring halfway through.
Butter Sauce
- Melt the butter in a saucepan. Add minced garlic and cook for 1-2 minutes. Stir in lemon juice and season with salt and pepper.
Adding Salmon
- After 15 minutes of baking the potatoes, push them to one side and place the seasoned salmon in the cleared space.
- Spoon lemon butter over the salmon and add lemon slices on top.
Adding Broccoli
- Add the broccoli to the baking sheet, drizzle with olive oil, and season with salt and pepper.
Final Cooking
- Return the baking sheet to the oven and roast for another 15-20 minutes until salmon is flaky and broccoli is tender.
Serving
- Let the dish rest for a couple of minutes, garnish with parsley, and serve.
Notes
Make sure to check cooking times for thinner salmon fillets. You can customize the vegetables according to season.
