  • 4 fillets salmon (6 oz each) Fresh or frozen works!
  • 4 medium potatoes (about 2 lbs) Yukon Gold preferred for creamy texture.
  • 1 lb broccoli florets A fantastic source of fiber and vitamins.
Butter Sauce
  • 1/2 cup unsalted butter (1 stick) Elevates the flavors of the salmon.
  • 2 lemons (1 for juice, 1 for slices) Adds brightness to the dish.
  • 4 cloves garlic (minced) Gives the lemon butter a wonderful aroma.
  • 1 teaspoon salt Essential for enhancing flavors.
  • 1/2 teaspoon black pepper Essential for enhancing flavors.
  • 1 teaspoon paprika Gives a lovely kick and color to the potatoes.
  • 2 tablespoons olive oil Helps with caramelization.
  • to taste Fresh parsley for garnish Optional, for a pop of color.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Potato Preparation
  1. Wash, peel (if you prefer), and cut the potatoes into small cubes. Toss them with olive oil, salt, black pepper, and paprika.
Roasting Potatoes
  1. Spread the seasoned potatoes on one side of the baking sheet and bake for 25 minutes, stirring halfway through.
Butter Sauce
  1. Melt the butter in a saucepan. Add minced garlic and cook for 1-2 minutes. Stir in lemon juice and season with salt and pepper.
Adding Salmon
  1. After 15 minutes of baking the potatoes, push them to one side and place the seasoned salmon in the cleared space.
  2. Spoon lemon butter over the salmon and add lemon slices on top.
Adding Broccoli
  1. Add the broccoli to the baking sheet, drizzle with olive oil, and season with salt and pepper.
Final Cooking
  1. Return the baking sheet to the oven and roast for another 15-20 minutes until salmon is flaky and broccoli is tender.
Serving
  1. Let the dish rest for a couple of minutes, garnish with parsley, and serve.

Notes

Make sure to check cooking times for thinner salmon fillets. You can customize the vegetables according to season.
