Method
Cooking Pasta
- Cook the pasta according to package instructions until al dente, usually around 8-10 minutes. Ensure to stir occasionally to prevent sticking. Drain and set aside, keeping a splash of the pasta water for later use.
Making the Sauce
- In a large skillet, melt the butter over medium heat. Wait for it to become frothy, which usually takes about 1-2 minutes.
- Add the minced garlic, sautéing for about 1-2 minutes until fragrant and lightly golden.
- Pour in the lemon juice and zest, stirring well to combine. The mixture should bubble slightly.
- Next, add the heavy cream while stirring continuously. Allow the sauce to simmer for 3-4 minutes.
- Season with salt and pepper to taste.
- Toss the cooked pasta in the sauce until every piece is well coated. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. This sauce can also be frozen for up to one month before adding pasta.
