Ingredients
  

For the Shortbread Crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
For the Lemon Filling
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup freshly squeezed lemon juice Fresh juice enhances flavor.
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder
  • powdered sugar for dusting Optional, for serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan.
  2. In a mixing bowl, combine flour, powdered sugar, and salt. Add softened butter and mix until crumbly.
  3. Press the mixture evenly into the bottom of the prepared pan to form a crust.
  4. Bake the crust for 15-20 minutes until lightly golden brown.
Making the Lemon Filling
  1. In a separate bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  2. Pour the lemon mixture over the baked crust and return to the oven.
  3. Bake for an additional 20-25 minutes, until the middle is set with a slight jiggle.
Cooling and Serving
  1. Allow the lemon bars to cool completely in the pan for 1-2 hours before dusting with powdered sugar and cutting.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Warm briefly in the oven before serving.
