Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, powdered sugar, and salt until well mixed.
- Cut the softened butter into the flour mixture until it resembles coarse crumbs.
- Press the mixture firmly into the bottom of a greased 8×8-inch baking pan, ensuring an even layer.
- Bake the crust for 15-20 minutes, or until lightly golden around the edges.
Filling
- While the crust is baking, in a large bowl, whisk the eggs, then stir in granulated sugar, lemon juice, lemon zest, and baking powder until combined.
- Once the crust is golden, remove it from the oven and pour the lemon filling over it.
- Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set.
- Allow the lemon bars to cool completely in the pan before dusting with powdered sugar and slicing into squares.
Notes
These lemon bars are best served chilled. For storage, keep in an airtight container in the refrigerator for up to one week or freeze for up to three months.
