Preparation
- Preheat oven to 350°F (175°C).
- In a medium bowl, combine flour and powdered sugar. Cut in softened butter until it resembles coarse crumbs.
- Press the mixture evenly into the bottom of a greased 8x8 inch baking pan.
Baking the Crust
- Bake the crust for 15 minutes or until lightly golden.
Prepare Filling
- In a separate bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
- Pour the lemon filling over the hot crust.
- Return to oven and bake for an additional 20 minutes until the filling is set but jiggles slightly in the center.
Cooling and Serving
- Allow lemon bars to cool in the pan on a wire rack.
- Dust the top with powdered sugar, then slice into squares.
- For firmer texture, chill in the fridge for an hour before serving.

Serve at room temperature or slightly chilled. Pair with iced tea or a glass of white wine. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months.
