Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened Use room temperature for easier blending.
For the filling
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice For best flavor, use fresh lemons.
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine flour and powdered sugar. Cut in softened butter until it resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of a greased 8x8 inch baking pan.
Baking the Crust
  1. Bake the crust for 15 minutes or until lightly golden.
Prepare Filling
  1. In a separate bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
  2. Pour the lemon filling over the hot crust.
  3. Return to oven and bake for an additional 20 minutes until the filling is set but jiggles slightly in the center.
Cooling and Serving
  1. Allow lemon bars to cool in the pan on a wire rack.
  2. Dust the top with powdered sugar, then slice into squares.
  3. For firmer texture, chill in the fridge for an hour before serving.

Notes

Serve at room temperature or slightly chilled. Pair with iced tea or a glass of white wine. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months.
