Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds, about 1/4-inch thick.
  3. In a mixing bowl, combine ricotta cheese, egg, Italian seasoning, salt, and pepper until creamy.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
Layering
  1. Place a layer of zucchini slices over the marinara, then spoon some of the ricotta mixture on top. Follow with mozzarella cheese.
  2. Repeat the layers until all ingredients are used, finishing with marinara and mozzarella.
  3. Sprinkle top with grated Parmesan cheese.
Baking
  1. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  2. Allow to cool for a few minutes, then garnish with fresh basil before serving.

Notes

Use a mandoline slicer for uniform zucchini slices. For a quicker version, store-bought marinara can be used. Let it rest before serving.
