Preparation
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis into thin rounds, about 1/4-inch thick.
- In a mixing bowl, combine ricotta cheese, egg, Italian seasoning, salt, and pepper until creamy.
- Spread a layer of marinara sauce on the bottom of a baking dish.
Layering
- Place a layer of zucchini slices over the marinara, then spoon some of the ricotta mixture on top. Follow with mozzarella cheese.
- Repeat the layers until all ingredients are used, finishing with marinara and mozzarella.
- Sprinkle top with grated Parmesan cheese.
Baking
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
- Allow to cool for a few minutes, then garnish with fresh basil before serving.
Notes
Use a mandoline slicer for uniform zucchini slices. For a quicker version, store-bought marinara can be used. Let it rest before serving.
