Ingredients
  

For the Soup Base
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces can crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 8 pieces lasagna noodles, broken
For Serving
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese Plus more for topping
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. In a large pot, brown the ground beef with chopped onion and minced garlic until cooked through. Drain excess fat.
Cooking
  1. Stir in the crushed tomatoes, beef broth, and Italian seasoning.
  2. Bring to a boil, then reduce heat and add the broken lasagna noodles.
  3. Simmer until the noodles are tender.
  4. Stir in the ricotta cheese until well blended.
Serving
  1. Serve hot, topped with shredded mozzarella cheese and fresh basil.

Notes

For extra flavor, add chopped bell peppers or mushrooms when cooking the ground beef. For a spicier soup, add a pinch of red pepper flakes. For a lighter version, use ground turkey or chicken.
