Ingredients
  

For the Soup Base
  • 2 tsp light olive oil
  • 1 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 2 lb lean ground beef
  • 2 tsp Italian seasoning
  • tsp ground cinnamon
  • 1 tsp salt
  • to taste Black pepper
  • 1 jar Marinara sauce (24 oz)
  • 6 cups low-sodium beef broth
  • 1 can crushed tomatoes (28 oz)
For the Pasta and Toppings
  • 12 oz broken-up lasagna noodles or Mafalda noodles
  • ½ cup heavy cream (or half & half) For a lighter version, use half & half.
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded

Method
 

Preparation
  1. Heat a large soup pot or Dutch oven over medium-high heat and add the light olive oil.
  2. Sauté the onion and garlic for 2-3 minutes or until tender.
  3. Add the ground beef and cook until brown, crumbling it as it cooks, around 4-5 minutes.
  4. Pour in the marinara sauce, beef broth, Italian seasoning, ground cinnamon, salt, and black pepper to taste.
  5. Bring to a boil, then reduce the heat and let it simmer for a couple of minutes.
  6. Add the broken lasagna noodles and simmer until al dente, about 8 minutes.
  7. Remove from heat and stir in the heavy cream and cheeses until melted.
  8. Check the seasoning and add salt if needed. Serve hot.

Notes

Serve with garlic bread or a side salad. For extra flavor, use homemade marinara sauce, and feel free to add vegetables like spinach or zucchini. Adjust seasoning to your preference.
