Ingredients
  

Meat Ingredients
  • 1/2 pound lean ground beef Use a lean variety for healthier soup.
  • 1/2 pound ground Italian sausage Alternatively, use ground turkey.
  • to taste Salt and freshly ground black pepper Adjust according to preference.
Vegetable Ingredients
  • 1 medium yellow onion, chopped
  • 1 Tablespoon olive oil
  • 3 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 recipe homemade marinara sauce (or 24 ounce marinara sauce) Homemade adds depth of flavor.
  • 1/4 teaspoon red pepper flakes Optional for heat.
  • 2 Tablespoons fresh parsley, chopped (or 2 tsp dried) Use fresh for better taste.
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 7 cups low sodium chicken broth (or vegetable broth) Low sodium recommended for health.
  • 9 pieces lasagna noodles, broken into pieces Break into quarters to fit in soup.
  • 2 cups fresh spinach leaves (optional) Add for added nutrition.
Cheese Ingredients
  • 10 ounces ricotta cheese (or cottage cheese)
  • 1 cup shredded mozzarella cheese Fresh mozzarella can be used.
  • 1/2 cup freshly grated parmesan cheese Use a good quality Parmesan.
Garnish
  • Fresh basil, for serving Adds freshness.

Method
 

Cooking the Meat
  1. In a large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper as you cook.
  2. Drain the grease and remove the meat from the pot.
Sautéing Vegetables
  1. Heat olive oil over medium heat in the same pot.
  2. Toss in the diced onion and sauté for about 5 minutes, stirring occasionally.
  3. Add the minced garlic and cook for another minute or two.
Combining Ingredients
  1. Stir in the tomato paste, marinara sauce, spices, and broth.
  2. Return the meat to the pot.
  3. Bring to a boil.
  4. Add the lasagna noodles (broken into quarters) to the pot and reduce the heat to medium-low.
  5. Cook, stirring occasionally, until the noodles are tender. Add spinach if using.
Cheese Mixture
  1. In a small bowl, stir together the mozzarella, parmesan, and ricotta cheeses.
Serving
  1. Ladle the hot soup into bowls and dollop a scoop of the cheese mixture on top.
  2. Garnish with fresh basil.

Notes

Feel free to customize the vegetables. Zucchini or mushrooms work great in this soup. For added flavor, use homemade marinara sauce if you have it on hand. You can make this soup ahead of time since the flavors develop even more as it sits.
