  • 1 lb lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Fresh basil for garnish

Method
 

Cooking
  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion, garlic, carrots, and celery. Sauté until they soften.
  3. Stir in the crushed tomatoes, beef broth, lasagna noodles, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer until the noodles are cooked, about 10-12 minutes.
  5. Remove the pot from heat and stir in the ricotta, mozzarella, and Parmesan cheeses until they melt and combine well.
  6. Serve hot and garnish with fresh basil.

Notes

Lasagna soup is best served warm. Pairs well with crusty bread or a simple salad. Adjust vegetables as desired or add spices for extra flavor. For vegetarian or gluten-free options, substitute accordingly.
