Ingredients
  

For the soup base
  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 8 oz lasagna noodles, broken into pieces
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
For serving
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Method
 

Preparation
  1. In a large pot, brown the ground beef or sausage over medium heat.
  2. Add chopped onion and minced garlic, sautéing until onions are translucent.
  3. Stir in crushed tomatoes, beef broth, water, and Italian seasoning.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 10 minutes.
Cooking
  1. Add broken lasagna noodles and continue to simmer until the noodles are tender, about 10-12 minutes.
  2. Season with salt and pepper to taste.
  3. Serve soup in bowls topped with a spoonful of ricotta, shredded mozzarella, and fresh basil.

Notes

For a richer flavor, you can add a splash of red wine when you sauté the onions and garlic. Feel free to mix in your favorite vegetables like spinach or bell peppers for added nutrition. If you want a spicier kick, add some crushed red pepper flakes or diced jalapeños. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
