Preparation
- Bring enough water to cover the eggs to a boil in a saucepan.
- Add salt and vinegar to the water.
- Carefully add the eggs to the boiling water.
- Cook the eggs for 6 minutes for a runny yolk or up to 10 minutes for hard-boiled eggs.
- After cooking, transfer the eggs to an ice water bath to cool completely.
- Meanwhile, prepare the marinade by mixing soy sauce, water, and rice syrup until well combined.
- Add garlic, green onions, chili peppers, and sesame seeds to the marinade and mix well.
- Carefully peel the cooled eggs.
- Place the peeled eggs in an airtight container and pour the marinade over them.
- Cover and refrigerate for at least 6 hours or overnight before serving.
Serving
- Serve the marinated eggs with hot rice, some marinade, and a drizzle of sesame oil.
Notes
Store the marinated eggs in an airtight container in the refrigerator for up to 5 days. The longer they sit in the marinade, the more flavor they will absorb. Adjust the cooking time based on your yolk preference and feel free to customize the marinade with additional spices or herbs.
