Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
For the filling
  • 1 can sweetened condensed milk (14 oz)
  • 1/2 cup Key lime juice
  • 2 large eggs
  • Zest of 2 limes
  • Powdered sugar for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to get it ready for baking.
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until crumbly.
  3. Press the mixture firmly into the bottom of a greased 8-inch square baking pan, making an even layer.
Cooking
  1. In another bowl, whisk together the sweetened condensed milk, Key lime juice, eggs, and lime zest until smooth and well combined.
  2. Pour the Key lime mixture over the prepared crust in the baking pan, ensuring it’s evenly distributed.
  3. Place the pan in the oven and bake for 15-20 minutes, or until the filling is set and the edges are lightly bubbling.
Cooling and Serving
  1. Allow the bars to cool completely in the pan on a wire rack.
  2. Once cooled, refrigerate for at least 2 hours.
  3. Cut into bars and optionally dust with powdered sugar before serving.

Notes

Key Lime Bars can be made a day in advance and stored in the refrigerator for up to 5 days, or frozen for up to 3 months. Serve chilled.
