Preparation
- Season the pork chops generously with salt and pepper on both sides.
Cooking
- Heat a large skillet over medium-high heat and add olive oil. Once hot, sear the pork chops for 5-7 minutes on each side, until golden brown and they reach an internal temperature of 145°F. Remove the chops from the pan and set aside.
- In the same skillet, add butter and sliced mushrooms. Cook for about 5-6 minutes, stirring occasionally, until the mushrooms are browned and tender.
- Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Pour in chicken broth and scrape the bottom of the skillet to release any brown bits. Let it simmer for 3-4 minutes until reduced slightly.
- Stir in the heavy cream and allow it to simmer for another 3-4 minutes, until the sauce thickens slightly and coats the back of a spoon.
- Return the pork chops to the skillet, spooning the sauce over them. Let them simmer in the sauce for about 2-3 minutes to absorb flavors.
- Garnish with freshly chopped parsley before serving.
Notes
Use room temperature pork chops for even cooking. Fresh herbs like thyme or rosemary can enhance the dish beautifully. Consider substituting garlic with shallots for a milder flavor.
