Preparation

- Place the lamb in a roasting pan and cover it tightly with foil.
Cooking
- Roast in the oven for about 4-5 hours, until the meat is fork-tender and easily pulls apart.
- For the last 30 minutes of cooking, carefully remove the foil to allow the lamb to brown.
- Once done, let the lamb rest for about 15-20 minutes before carving.
- Garnish with fresh herbs before serving.
Notes
Reheat leftovers in the oven at a low temperature for best results. If desired, use fresh tomatoes, but cook them down to avoid excess moisture. Use spice variations like smoked paprika or cayenne for a different profile.
