Preparation
  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine the sun-dried tomatoes, minced garlic, olive oil, salt, and pepper.
  3. Generously rub the mixture all over the lamb shoulder, making sure to coat it evenly for maximum flavor.
  4. Place the lamb in a roasting pan and cover it tightly with foil.
Cooking
  1. Roast in the oven for about 4-5 hours, until the meat is fork-tender and easily pulls apart.
  2. For the last 30 minutes of cooking, carefully remove the foil to allow the lamb to brown.
  3. Once done, let the lamb rest for about 15-20 minutes before carving.
  4. Garnish with fresh herbs before serving.

Notes

Reheat leftovers in the oven at a low temperature for best results. If desired, use fresh tomatoes, but cook them down to avoid excess moisture. Use spice variations like smoked paprika or cayenne for a different profile.
