  • 1 piece 3-4 lb beef chuck roast
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1 packet French onion soup mix
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons olive oil
  • to garnish Fresh thyme, optional

Method
 

Preparation and Browning
  1. Preheat your oven to 300°F (150°C).
  2. Season the beef chuck roast with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Brown the roast on all sides, then remove from heat.
  4. In the same skillet, add sliced onions and cook until caramelized, about 10 minutes.
Roasting
  1. In a roasting pan, combine beef broth and onion soup mix. Place the browned roast in the pan and top with caramelized onions.
  2. Cover the pan with foil and roast in the preheated oven for 3-4 hours, or until the meat is fork-tender.
  3. Remove from oven and let rest for a few minutes before slicing.
Serving
  1. Garnish with fresh thyme if desired, and serve warm.

Notes

Great served with mashed potatoes or crusty bread to soak up the delicious gravy. Adding steamed vegetables or a fresh salad balances the meal nicely.
