Preparation and Browning
- Preheat your oven to 300°F (150°C).
- Season the beef chuck roast with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Brown the roast on all sides, then remove from heat.
- In the same skillet, add sliced onions and cook until caramelized, about 10 minutes.
Roasting
- In a roasting pan, combine beef broth and onion soup mix. Place the browned roast in the pan and top with caramelized onions.
- Cover the pan with foil and roast in the preheated oven for 3-4 hours, or until the meat is fork-tender.
- Remove from oven and let rest for a few minutes before slicing.
Serving
- Garnish with fresh thyme if desired, and serve warm.
Notes
Great served with mashed potatoes or crusty bread to soak up the delicious gravy. Adding steamed vegetables or a fresh salad balances the meal nicely.
