- Slice the cucumbers into rounds and place them in a large bowl.
- Halve the cherry tomatoes and add them to the bowl.
- Cut the mozzarella cheese into bite-sized pieces and add it to the salad.
- Tear fresh basil leaves and add them in.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
- Toss gently to combine.
- Serve immediately or chill until ready to serve.
Notes
Store in an airtight container in the refrigerator for up to 2 days. For best taste, prepare fresh and add vinaigrette just before serving.
