  • 2 large large cucumbers
  • 1 cup cherry tomatoes Halved
  • 8 ounces fresh mozzarella cheese Cut into bite-sized pieces
  • Fresh basil leaves Torn
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Slice the cucumbers into rounds and place them in a large bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Cut the mozzarella cheese into bite-sized pieces and add it to the salad.
  4. Tear fresh basil leaves and add them in.
  5. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  6. Toss gently to combine.
  7. Serve immediately or chill until ready to serve.

Notes

Store in an airtight container in the refrigerator for up to 2 days. For best taste, prepare fresh and add vinaigrette just before serving.
