Ingredients
  

Casserole Base
  • 1 pound Ground beef Use lean ground beef for a healthier option.
  • 1 medium Onion, diced Adds flavor to the beef mixture.
  • 1 medium Bell pepper, diced Any color bell pepper can be used.
  • 2 cups Diced tomatoes Canned or fresh.
  • 1 cup Cheese, shredded Cheddar is recommended, but any cheese can be used.
Biscuits
  • 1 package Flaky biscuits Follow package instructions for baking.
Seasonings
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.

Method
 

Preparation
  1. Preheat the oven according to biscuit package instructions.
  2. In a skillet, cook the ground beef with diced onions and bell peppers until browned.
  3. Stir in diced tomatoes and seasonings, cooking for an additional few minutes.
Assembly and Baking
  1. In a casserole dish, layer the biscuits on the bottom.
  2. Pour the beef mixture over the biscuits.
  3. Top with cheese.
  4. Bake in the oven according to the biscuit package instructions or until the cheese is bubbly and golden.

Notes

Serve hot with a side of salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze individual portions for up to 2 months. Consider adding more veggies or using cornbread for variation.
