  1. In a large pot, heat a splash of olive oil over medium heat until shimmering.
  2. Add chopped onion, cooking until it becomes translucent, about 5 minutes, stirring occasionally to prevent sticking.
  3. Incorporate minced garlic and Italian sausage, breaking it apart with a wooden spoon. Cook until the sausage is browned, about 6-8 minutes.
  4. Stir in orzo and chicken broth, bringing the mixture to a vigorous boil.
  5. Once boiling, reduce heat to low and let it simmer for about 10 minutes, or until orzo is tender yet still al dente.
  6. Mix in grated Parmesan cheese and spinach (if using), stirring until cheese is melted and spinach is wilted.
  7. Season with salt and pepper to taste.
  8. Serve hot, allowing the aroma to fill your home.

Notes

For best experience, serve hot in shallow bowls and garnish with extra Parmesan, olive oil, or fresh herbs. Consider a side salad or crusty bread to complement the meal.
