Ingredients
  

Soup Base
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt
  • to taste pepper
  • 1 cup cooked rice or noodles (optional)
  • to taste Fresh parsley for garnish

Method
 

Preparation
  1. In a large pot, heat a bit of oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the diced carrots and celery to the pot, and cook for a few more minutes.
Cooking
  1. Pour in the chicken broth and add the dried oregano and thyme.
  2. Let the soup simmer for 20-30 minutes until the vegetables are tender.
  3. If using, stir in the cooked rice or noodles.
  4. Season with salt and pepper to taste.
  5. Serve warm, garnished with fresh parsley.

Notes

For extra flavor, add a splash of lemon juice just before serving. Customize by adding proteins like shredded chicken or beans, and switch herbs for Italian seasoning or add red pepper flakes for heat.
