Ingredients
  

Meatloaf Ingredients
  • 1.5 lb ground beef
  • 1 large egg
  • 3/4 c. crushed saltine crackers
  • 1/2 c. chopped onion
  • 2 cans (8 oz each) tomato sauce
  • 1 tsp salt
  • 1/8 tsp ground black pepper
  • 1/2 tsp dried oregano
  • 2 c. shredded Mozzarella cheese

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine all ingredients EXCEPT for the cheese and 1 can of tomato sauce.
  3. Shape the mixture into a 10” x 12” rectangle on a piece of wax paper.
  4. Sprinkle 1 1/2 c. cheese over the meat.
  5. Roll up the meat starting from the long side of the rectangle, pulling back the wax paper as you go. Press the ends to seal.
Baking
  1. Place the rolled meatloaf on a large baking sheet.
  2. Bake for 1 hour. After baking, drain off any grease.
  3. Pour the remaining tomato sauce over the loaf and sprinkle with the remaining cheese.
  4. Bake for an additional 15 minutes or until the cheese is melted.

Notes

Serve with garlic bread and salad. Leftovers can be stored for up to 3 days in the refrigerator or frozen for 3 months. Use fresh ingredients for best flavor. Add variations like different cheeses or herbs for extra taste.
