Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine all ingredients EXCEPT for the cheese and 1 can of tomato sauce.
- Shape the mixture into a 10” x 12” rectangle on a piece of wax paper.
- Sprinkle 1 1/2 c. cheese over the meat.
- Roll up the meat starting from the long side of the rectangle, pulling back the wax paper as you go. Press the ends to seal.
Baking
- Place the rolled meatloaf on a large baking sheet.
- Bake for 1 hour. After baking, drain off any grease.
- Pour the remaining tomato sauce over the loaf and sprinkle with the remaining cheese.
- Bake for an additional 15 minutes or until the cheese is melted.
Notes
Serve with garlic bread and salad. Leftovers can be stored for up to 3 days in the refrigerator or frozen for 3 months. Use fresh ingredients for best flavor. Add variations like different cheeses or herbs for extra taste.
