  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, cubed
  • 1/2 cup marinara sauce
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup crispy breadcrumbs (for topping)

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
  4. Stuff the center with mozzarella cheese cubes and pour marinara sauce over the top.
  5. Sprinkle with crispy breadcrumbs.
Cooking
  1. Bake for 45-55 minutes or until the meatloaf reaches an internal temperature of 165°F (74°C).
  2. Let cool for a few minutes before slicing and serving.

Notes

For serving, pair with roasted vegetables, a fresh salad, or pasta. Drizzle more marinara sauce on top if desired. To store, wrap tightly in plastic wrap or place in an airtight container; refrigerate for up to 3-4 days or freeze for 2-3 months. Thaw in the refrigerator before reheating.
