  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 each egg
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce For topping
  • as needed additional breadcrumbs Additional breadcrumbs for topping

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, shredded mozzarella cheese, egg, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Transfer the meat mixture to a loaf pan and shape it into a loaf.
  4. Spread marinara sauce over the top of the meatloaf, then sprinkle additional breadcrumbs on top for added crunch.
Cooking
  1. Bake in the preheated oven for 45-55 minutes, or until the meatloaf reaches an internal temperature of 165°F (74°C).
  2. Let it rest for 10 minutes before slicing and serving.

Notes

Serve with a side of pasta or fresh salad. This meatloaf can be topped with more marinara sauce and extra cheese if desired. Store leftovers by wrapping or placing in an airtight container in the fridge for up to three days, or freeze for up to three months.
