Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking dish with parchment paper for easy cleanup.
  3. Place the salmon fillets in the baking dish and sprinkle them with kosher salt and black pepper.
Cooking
  1. In a small saucepan, combine the pomegranate juice, brown sugar, fresh squeezed orange juice, and orange zest. Bring to a simmer over medium heat and stir until the sugar dissolves and the mixture thickens slightly.
  2. Pour the pomegranate glaze over the salmon fillets.
  3. Bake in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork.
  4. Once done, remove from the oven and sprinkle pomegranate seeds, orange slices, parsley, and green onions on top for garnish.

Notes

Make sure to choose the freshest salmon for the best flavor. For extra flavor, marinate the salmon in the glaze for 30 minutes before baking. Feel free to adjust the sweetness of the glaze by adding more or less brown sugar based on your taste.
