Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round pan. Prepare peaches by peeling and slicing.
  2. Cream together butter and brown sugar until light and fluffy. Beat in vanilla and eggs one at a time.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Alternate adding dry mix and milk to the creamed mixture until just combined.
  4. Fold in some peach chunks. Pour half the batter into the pan, layer with peaches, add remaining batter, and top with more peaches.
  5. Bake for 40–45 minutes until a skewer comes out clean. Cool in pan 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Use ripe peaches for best flavor. Optional: top with a brown sugar oat crumble before baking. Reheat slices in the oven for a just-baked experience.
