- Preheat oven to 350°F (175°C). Grease a 9-inch round pan. Prepare peaches by peeling and slicing.
- Cream together butter and brown sugar until light and fluffy. Beat in vanilla and eggs one at a time.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Alternate adding dry mix and milk to the creamed mixture until just combined.
- Fold in some peach chunks. Pour half the batter into the pan, layer with peaches, add remaining batter, and top with more peaches.
- Bake for 40–45 minutes until a skewer comes out clean. Cool in pan 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
Use ripe peaches for best flavor. Optional: top with a brown sugar oat crumble before baking. Reheat slices in the oven for a just-baked experience.
