Preparation
- Set the Instant Pot to 'Sauté' mode. Drizzle in the olive oil, then add the chopped onion and minced garlic.
- Sauté until the onion is translucent and fragrant.
Cooking
- Add the chicken breasts to the pot, browning them on both sides for about 3-4 minutes each.
- Pour in the chicken broth and add the mixed vegetables, dried thyme, salt, and pepper.
- Close the lid securely and set the Instant Pot to 'Manual' or 'Pressure Cook' for 10 minutes.
- Once cooking is complete, let the pressure release naturally for 5 minutes, then do a quick release.
- Dish out the warm chicken and veggies onto plates, and enjoy.
