  • 1 cup chicken broth Homemade or store-bought, it’s the essence of comfort.
  • 1 onion, chopped Sweet and aromatic when sautéed; it forms the flavor base.
  • 2 cloves garlic, minced Adds a fragrant kick.
  • 1 teaspoon dried thyme This herb brings a touch of earthiness.
  • to taste Salt and pepper Essential for enhancing the natural flavors.
  • 2 tablespoons olive oil Helps to sauté the aromatics and provides healthy fats.

Method
 

Preparation
  1. Set the Instant Pot to 'Sauté' mode. Drizzle in the olive oil, then add the chopped onion and minced garlic.
  2. Sauté until the onion is translucent and fragrant.
Cooking
  1. Add the chicken breasts to the pot, browning them on both sides for about 3-4 minutes each.
  2. Pour in the chicken broth and add the mixed vegetables, dried thyme, salt, and pepper.
  3. Close the lid securely and set the Instant Pot to 'Manual' or 'Pressure Cook' for 10 minutes.
  4. Once cooking is complete, let the pressure release naturally for 5 minutes, then do a quick release.
  5. Dish out the warm chicken and veggies onto plates, and enjoy.

Notes

Season generously and feel free to mix it up with your favorite herbs. Use quality broth for best results.
