Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for texture.
- Stir the melted butter into the mashed bananas, blending well.
- Mix in the honey and vanilla extract, stirring until thoroughly combined.
- Beat in the egg until the mixture is well incorporated.
- Sprinkle the baking soda and salt over the mixture and gently mix in to avoid lumps.
- Add the flour last, stirring only until just incorporated. Avoid overmixing.
- Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to 3 days. It can also be frozen for up to 3 months.
