  • 3 pieces ripe bananas, mashed Ensure they are fully ripe for best sweetness.
  • 1/3 cup melted butter
  • 1/2 cup honey Can be substituted with maple syrup for vegan option.
  • 1 teaspoon vanilla extract Use pure vanilla extract for better flavor.
  • 1 piece egg, beaten For vegan option, replace with a 'flax egg'.
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for texture.
  3. Stir the melted butter into the mashed bananas, blending well.
  4. Mix in the honey and vanilla extract, stirring until thoroughly combined.
  5. Beat in the egg until the mixture is well incorporated.
  6. Sprinkle the baking soda and salt over the mixture and gently mix in to avoid lumps.
  7. Add the flour last, stirring only until just incorporated. Avoid overmixing.
  8. Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days. It can also be frozen for up to 3 months.
