  2. Peel and cut the carrots into uniform pieces about 2-3 inches long.

  4. Spread the carrots in a single layer on a baking sheet, ensuring space between each piece.
Cooking
  1. Roast in the oven for 20-25 minutes, stirring halfway through, until carrots are tender and caramelized.
  2. Sprinkle fresh thyme over the carrots just before serving, if using.
