  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons soy sauce
  • 2 cups cooked rice For serving.

  • 1 tablespoon Olive oil For browning the chicken.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix honey, Dijon mustard, soy sauce, salt, and pepper.
Cooking
  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper and brown them on both sides.
  2. Place the browned chicken in a baking dish and pour the honey-mustard mixture over it.
  3. Bake for 25-30 minutes, or until the chicken is cooked through.
  4. Serve the chicken over cooked rice and garnish with chopped parsley.

Notes

For extra flavor, marinate the chicken in the honey mustard sauce for a few hours before cooking. If you like a bit of spice, add some chili flakes to the honey and mustard mixture. Use a meat thermometer to ensure the chicken is cooked to the right temperature (165°F or 75°C). Leftovers can be stored in an airtight container for up to 3 days.
