Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix honey, Dijon mustard, soy sauce, salt, and pepper.
Cooking
- Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper and brown them on both sides.
- Place the browned chicken in a baking dish and pour the honey-mustard mixture over it.
- Bake for 25-30 minutes, or until the chicken is cooked through.
- Serve the chicken over cooked rice and garnish with chopped parsley.
Notes
For extra flavor, marinate the chicken in the honey mustard sauce for a few hours before cooking. If you like a bit of spice, add some chili flakes to the honey and mustard mixture. Use a meat thermometer to ensure the chicken is cooked to the right temperature (165°F or 75°C). Leftovers can be stored in an airtight container for up to 3 days.
