Chicken

Rice
  • 1 cup Brown Rice Hearty base.
  • 2 cups Chicken Broth or Water For cooking the rice.

Equipment

  • 1 Bowl For marinating the chicken.
  • 1 Pot For cooking the rice.

Method
 

Marinate the Chicken
  1. In a bowl, mix honey, lime juice, minced garlic, and salt. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Cook the Rice
  1. In a pot, combine rice and chicken broth (or water). Bring to a boil, reduce heat, cover, and cook for 15-20 minutes until fluffy.
Grill the Chicken
  1. Preheat grill or skillet over medium heat. Cook marinated chicken for 6-7 minutes on each side until fully cooked and golden brown.
Prepare the Avocado
  1. Dice avocados and squeeze lime juice over them to keep fresh.
Assemble the Stack
  1. Layer rice on a plate, add grilled chicken, top with diced avocado and cilantro.
Drizzle with Honey Lime Sauce
  1. Drizzle leftover honey lime marinade over the top for extra flavor.
