Marinate the Chicken
- In a bowl, mix honey, lime juice, minced garlic, and salt. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Cook the Rice
- In a pot, combine rice and chicken broth (or water). Bring to a boil, reduce heat, cover, and cook for 15-20 minutes until fluffy.
Grill the Chicken
- Preheat grill or skillet over medium heat. Cook marinated chicken for 6-7 minutes on each side until fully cooked and golden brown.
Prepare the Avocado
- Dice avocados and squeeze lime juice over them to keep fresh.
Assemble the Stack
- Layer rice on a plate, add grilled chicken, top with diced avocado and cilantro.
Drizzle with Honey Lime Sauce
- Drizzle leftover honey lime marinade over the top for extra flavor.
