Ingredients
  

For the chicken
  • 2 cups cooked chicken, shredded
  • 1 cup honey
  • 1/4 cup hot sauce Adjust based on heat preference
For the salad
  • 4 cups mixed greens Ensure thoroughly dried after washing
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • Salt and pepper to taste
  • 1/4 cup blue cheese, crumbled (optional)

Method
 

Preparation
  1. In a medium bowl, combine the shredded chicken with honey and hot sauce. Stir until the chicken is evenly coated in the sauce, about 1-2 minutes.
  2. In a large salad bowl, combine mixed greens, halved cherry tomatoes, sliced red onion, and diced cucumber. Toss the ingredients lightly to combine.
  3. Pour the honey-hot chicken mixture on top of the salad. Use forks or tongs to gently toss everything together.
  4. Sprinkle salt and pepper to taste. If using, crumble blue cheese over the top and give one final toss.
Serving
  1. Serve immediately while the chicken is warm and the greens are crisp.

Notes

For best results, keep the chicken and greens separate until serving to prevent sogginess. Leftovers can be stored in an airtight container for up to 3 days.
