Base Ingredients
  • 1 cup cashews Soak in water for 1-2 hours for a creamier texture.
  • 1 cup Medjool dates, pitted Use fresh, soft dates for the best taste.
  • 1/2 cup peanut butter Use creamy or crunchy based on preference.
Nutritional Boost
  • 1/4 cup chia seeds Adds crunch and nutrition.
  • 1/4 cup protein powder Optional for extra protein; use favorite flavor.
  • 1/4 cup honey or maple syrup Optional for sweetness.

Method
 

Preparation
  1. In a food processor, combine the cashews, Medjool dates, and peanut butter. Blend until smooth and velvety.
  2. Add chia seeds and protein powder (if using). Blend until well combined.
  3. Transfer mixture into a lined 8x8 inch baking dish and press down firmly to create an even layer.
  4. Refrigerate for at least an hour to set.
  5. Once set, cut into bars and enjoy!

Notes

Use fresh Medjool dates for the best sweetness. Adjust nut choice and incorporate spices or chocolate as desired. Store in an airtight container in the fridge for up to a week or freeze for longer storage.
