  • 4 ripe peaches peeled and sliced
  • 2 tbsp lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 pinch salt

Method
 

  1. Peel and slice the peaches, removing the pits. Use a blanching method if needed to remove the skins easily.
  2. Place the peach slices, lemon juice, sugar, water, and salt into a blender or food processor. Blend until smooth and silky.
  3. Taste the mixture and adjust sweetness if necessary. Chill the blended mixture in the refrigerator for at least 1 hour.
  4. Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions. If not using a machine, pour into a shallow dish and freeze for 3–4 hours, stirring every 30 minutes.
  5. Let sit at room temperature for 5–10 minutes before scooping. Serve and enjoy!

Notes

Use super ripe peaches for best flavor. A splash of vodka can help maintain a soft, scoopable texture. Blend thoroughly for that perfect sorbet smoothness.
