Method
- Peel and slice the peaches, removing the pits. Use a blanching method if needed to remove the skins easily.
- Place the peach slices, lemon juice, sugar, water, and salt into a blender or food processor. Blend until smooth and silky.
- Taste the mixture and adjust sweetness if necessary. Chill the blended mixture in the refrigerator for at least 1 hour.
- Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions. If not using a machine, pour into a shallow dish and freeze for 3–4 hours, stirring every 30 minutes.
- Let sit at room temperature for 5–10 minutes before scooping. Serve and enjoy!
Notes
Use super ripe peaches for best flavor. A splash of vodka can help maintain a soft, scoopable texture. Blend thoroughly for that perfect sorbet smoothness.
