Ingredients
  

Pizza Dough
  • 1 lb pizza dough store-bought or homemade
Filling
  • 1 cup mozzarella cheese shredded
  • 1/2 cup pizza sauce
  • 1/2 cup pepperoni slices optional
Topping
  • 2 tbsp olive oil for brushing
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 2 tbsp grated Parmesan cheese

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the pizza dough on a lightly floured surface until about 1/8-inch thick. Cut into 8 rectangles.
  3. On one half of each rectangle, spread a spoonful of pizza sauce, sprinkle mozzarella cheese, and add pepperoni slices if using.
  4. Fold the dough over the filling and press the edges with a fork to seal.
  5. Brush the tops with olive oil and sprinkle with Italian seasoning, garlic powder, and Parmesan cheese.
  6. Bake for 18–20 minutes or until golden brown and puffed.

Notes

For extra crispy pockets, add a tiny slit at the top of each before baking. Feel free to customize with your favorite toppings like mushrooms, spinach, or cooked bacon.
