Hobo Casserole Ground Beef

  • 1 lb ground beef
  • 4 russet potatoes thinly sliced
  • 1 can cream of mushroom soup
  • 1 1/2 cups shredded cheddar cheese
  • 1 onion chopped
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1 tsp garlic powder
  • 1 tsp paprika

Method
 

  1. Preheat oven to 375°F (190°C). In a skillet, cook ground beef with chopped onion until browned. Drain excess fat. Season with salt, pepper, garlic powder, and paprika.
  2. In a greased baking dish, layer half the potatoes, half the beef mixture, half the soup, and half the cheese. Repeat the layers, finishing with cheese on top.
  3. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until bubbly and the potatoes are fork-tender.
  4. Let the casserole rest for 5–10 minutes before serving to set.

Notes

Add frozen veggies between layers for extra nutrition. Can be made ahead or frozen unbaked. Substitute ground turkey or use different soups for variation.
