Preparation
- Preheat the oven to 350°F (175°C) and line your loaf pan with parchment paper.
- In a mixing bowl, combine egg whites and cottage cheese. Whisk until smooth and creamy.
- Add almond flour, baking powder, salt, and olive oil to the mixture. Blend until well combined.
- Pour the batter into your prepared loaf pan and smooth the top.
Baking
- Place the loaf in the preheated oven and bake for 25-30 minutes.
- Check for doneness with a toothpick; it should come out clean.
Cooling
- Let the bread cool for a few minutes before slicing.
Notes
Store wrapped in plastic wrap or in an airtight container for up to 3 days. Freezes well for up to 3 months.
