  • 1 scoop chocolate protein powder approximately 30g
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp peanut butter powder
  • 1 tbsp sugar-free chocolate pudding mix
  • 1/2 tsp baking powder
  • 1/2 tsp sweetener of choice e.g., stevia or erythritol
Wet Ingredients
  • 1/3 cup unsweetened almond milk
  • 1 tsp vanilla extract
Topping
  • 1/2 tbsp mini chocolate chips use dairy-free if needed

Method
 

  1. In a small bowl, combine the protein powder, cocoa powder, peanut butter powder, pudding mix, baking powder, and sweetener. Stir until well mixed.
  2. Add the almond milk and vanilla extract to the dry ingredients. Stir until the batter is smooth and well combined.
  3. Lightly grease a microwave-safe mug with cooking spray. Pour the batter into the mug and sprinkle the mini chocolate chips on top.
  4. Microwave on medium-high power (about 70%) for 1 to 1 minute and 20 seconds. The cake should be set on the edges with a slightly gooey center.
  5. Allow the mug cake to cool for a minute before enjoying directly from the mug.

For a dairy-free version, ensure all ingredients, including protein powder and pudding mix, are plant-based. Adjust sweetness to taste, and avoid overcooking to maintain a molten center.
