- In a large pot, heat a little oil over medium heat and add the ground turkey or chicken. Cook until browned.
- Add the onion and garlic, cooking until the onion is translucent.
- Stir in the crushed tomatoes, broth, Italian seasoning, zucchini, and broken lasagna noodles.
- Bring to a boil, then reduce heat and let simmer for about 20-25 minutes, or until noodles are tender.
- Stir in ricotta and half of the mozzarella cheese.
- Season with salt and pepper.
- Serve in bowls, topped with remaining mozzarella cheese.
Notes
Feel free to add more vegetables like spinach or bell peppers for extra nutrition. Use whole grain or gluten-free lasagna noodles for a healthier option. For a creamier soup, add more ricotta cheese when serving.
