  • 1 lb lean ground turkey or chicken Lean meats are healthy; high in protein
  • 1 15 oz can black beans Drained and rinsed; adds fiber and protein
Base Ingredients
  • 1 tablespoon olive oil Healthy fat for browning the meat
  • 1 14.5 oz can diced tomatoes Adds moisture and acidity
  • 1 10 oz can green chilies Optional for heat
  • 1 cup low-sodium chicken broth Keeps it light and flavorful
Creamy Ingredients
  • 8 oz cream cheese Cubed for creaminess
  • 1 cup shredded cheddar cheese For added flavor
Spices
  • 1 packet taco seasoning Store-bought or homemade
  • 1 teaspoon garlic powder Enhances flavor
  • ½ teaspoon onion powder For warmth
  • 1 teaspoon cumin Brings taco flair
  • to taste salt and pepper Essential for flavor

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey or chicken and cook until browned, breaking it up as it cooks.
Cooking
  1. Sprinkle in taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Stir to combine.
  2. Pour in diced tomatoes, green chilies, black beans, and chicken broth. Stir to combine.
  3. Bring the mixture to a simmer, then add cubed cream cheese and stir until melted.
  4. Add shredded cheddar cheese and stir until melted and smooth.
  5. Taste the soup and adjust seasoning if needed before serving hot with optional toppings.

Notes

For a thicker soup, let it simmer longer. Can be made-ahead and stored in fridge for up to 3-4 days.
