Preparation
- Heat olive oil in a large pot over medium heat.
- Add ground turkey or chicken and cook until browned, breaking it up as it cooks.
Cooking
- Sprinkle in taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Stir to combine.
- Pour in diced tomatoes, green chilies, black beans, and chicken broth. Stir to combine.
- Bring the mixture to a simmer, then add cubed cream cheese and stir until melted.
- Add shredded cheddar cheese and stir until melted and smooth.
- Taste the soup and adjust seasoning if needed before serving hot with optional toppings.
Notes
For a thicker soup, let it simmer longer. Can be made-ahead and stored in fridge for up to 3-4 days.
