Preparation
- Hit the Sauté button on your Instant Pot and add a tablespoon of olive oil.
- Add the diced onion and sauté until soft, then add minced garlic and cook for an additional 30 seconds.
Cooking
- Place the frozen chicken breasts over the sautéed aromatics.
- Pour in 1 cup of chicken broth, scraping the bottom of the pot to incorporate any flavorful bits.
- Sprinkle thyme, rosemary, salt, and pepper over the chicken.
- Secure the lid on the Instant Pot and cook on high pressure for 10 minutes.
- After the cooking time is complete, let the pressure release naturally for 5 minutes, then vent the remaining pressure.
- Open the lid, shred the chicken in the pot using two forks, and mix it with the broth and vegetables.
Notes
Feel free to adjust the seasoning to your taste. Leftover chicken can be used in salads or pasta dishes.
