  • 1 lb chicken breast, cooked and shredded Use rotisserie chicken to save time.
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper diced Can substitute with red bell pepper.
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 cups chicken broth
  • 1 cup sour cream or Greek yogurt Use coconut cream for a dairy-free option.
  • to taste Salt and pepper
  • Fresh cilantro for garnish

Method
 

Preparation
  1. In a large pot, sauté the onion, garlic, and green bell pepper over medium heat until softened, about 5-7 minutes.
  2. Add the shredded chicken, white beans, corn, cumin, chili powder, and chicken broth, then stir everything together.
  3. Bring the mixture to a simmer and let it cook for 15-20 minutes, until it's thickened slightly.
  4. Stir in the sour cream or Greek yogurt until the chili is creamy and smooth.
  5. Season with salt and pepper to taste, adjusting as needed.
  6. Serve hot in bowls, garnished with fresh cilantro.

Notes

For best results, use room temperature ingredients. This chili can be prepared a day in advance to enhance flavor.
