  • 1 lb cooked chicken, shredded
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth Homemade broth adds depth of flavor.
  • 1 tsp cumin
  • 1 tsp chili powder Adjust for desired heat.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream (or Greek yogurt for a lighter option)
  • Fresh cilantro for garnish (optional)

Method
 

Cooking
  1. In a large pot over medium heat, add a little oil and sauté the onions and garlic until translucent.
  2. Add the shredded chicken, cannellini beans, diced green chiles, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir everything together and let it simmer on low for about 15 minutes.
  4. Stir in the heavy cream and simmer for an additional 5 minutes.
  5. Serve hot, garnished with fresh cilantro if desired.

Notes

Pairs well with crusty bread or tortilla chips. Consider adding toppings like shredded cheese, diced avocado, or sour cream for enhanced flavor.
