Ingredients
  

Base Ingredients
  • 2 medium Zucchini Sliced into thin rounds
  • 1 tablespoon Olive oil For brushing the zucchini
  • to taste Salt
  • to taste Pepper
Topping Ingredients
  • 1/2 cup Tomato sauce For spreading on zucchini
  • 1 cup Cheese (mozzarella or your choice) Shredded
  • to taste Toppings (pepperoni, veggies, etc.) Your choice of toppings
  • to taste Italian seasoning Optional

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice zucchini into thin rounds and place them on a baking sheet.
  3. Brush zucchini slices with olive oil and sprinkle with salt and pepper.
Baking
  1. Bake for about 10 minutes until slightly softened.
  2. Remove from the oven and spread a small amount of tomato sauce on each zucchini slice.
  3. Top with cheese and your choice of toppings.
  4. Sprinkle with Italian seasoning if desired.
  5. Return to the oven and bake for an additional 5 minutes or until cheese is melted and bubbly.

Notes

Serve these mini pizzas warm on a platter. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 5-10 minutes until warmed through. Customize with various toppings and sauces.
