Preparation
- Preheat the oven to 400°F (200°C).
- Slice zucchini into thin rounds and place them on a baking sheet.
- Brush zucchini slices with olive oil and sprinkle with salt and pepper.
Baking
- Bake for about 10 minutes until slightly softened.
- Remove from the oven and spread a small amount of tomato sauce on each zucchini slice.
- Top with cheese and your choice of toppings.
- Sprinkle with Italian seasoning if desired.
- Return to the oven and bake for an additional 5 minutes or until cheese is melted and bubbly.
Notes
Serve these mini pizzas warm on a platter. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 5-10 minutes until warmed through. Customize with various toppings and sauces.
