Ingredients
  

Main Ingredients
  • 1 cup fresh strawberries, hulled Use ripe strawberries that are in season for best flavor.
  • 1 can (13.5 oz) coconut milk, chilled Found in the international aisle or organic section of most grocery stores.
  • 1 tablespoon lime juice, freshly squeezed
  • 1-2 tablespoons maple syrup, to taste Can substitute with agave nectar if preferred.
  • 1 cup ice cubes

Method
 

Preparation
  1. Rinse and hull the strawberries, removing the green tops.
Blending
  1. In a blender, combine the hulled strawberries, chilled coconut milk, lime juice, and maple syrup.
  2. Add the ice cubes and blend on high for 30-60 seconds until smooth and frothy.
  3. Sample the drink. If it needs more sweetness, add a little more maple syrup and blend again until incorporated.
Serving
  1. Pour the drink into tall glasses and garnish with a slice of lime or a few whole strawberries.

Notes

Serve chilled for the best experience. Tall glasses showcase the luscious color beautifully. Store leftovers in an airtight container in the fridge for up to 2 days or freeze for longer storage.
