- Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan with parchment paper.
- In a large bowl, whisk together flour, sugars, baking soda, baking powder, salt, and spices.
- In another bowl, mix pumpkin puree, applesauce, oil, eggs, and vanilla until smooth.
- Combine wet ingredients with dry and stir until just moistened.
- Pour batter into prepared pan. Bake for 60–70 minutes, until a toothpick comes out with moist crumbs.
- Cool in pan for 10 minutes, then transfer to wire rack to cool completely before slicing.
Notes
Try adding chocolate chips, chopped walnuts, or a maple syrup swirl for variation. For gluten-free version, use 1:1 gluten-free flour.
